kale chicken pizza

so i tried another yummy recipe the other day.  pizza with kale, chicken and caramelized onions.  i wanted to try making it after i had it from pagliacci pizza one day.  the pizza that we generally make is all about the crust, usually thin crust.  i like to use italian '00' flour like below:

they have it at our grocery store, which is a town and country type store, but i think whole foods probably has it, too.  it's very finely ground and has a low gluten content, which is good for making pizza dough.  and this is the recipe that i use.  i also use a pizza stone, preheated in the oven.  ok, so you make the dough according to the recipe above, then when you are ready to make the pizzas, preheat your oven with the pizza stone in it to 500 degrees.  roll out some dough (according to the recipe) and put down your ingredients.  on this particular pizza i caramelized some onion, sauteed some mushrooms, and cooked some chicken breast.  here is the entire list of ingredients i used for the toppings:

caramelized onion
sauteed mushrooms
kale, tear the leaves into bite sized pieces, toss with olive oil, salt and pepper
grated Parmesan
grated sharp white cheddar
cooked chicken breast (i season it with salt and pepper, and whatever other spices i think will go well with the dish, heat oil in a pan at medium heat, lay the chicken down in the hot pan, sear on one side for about 6-7 minutes, flip, sear for 5 minutes, turn down heat to medium low, add chicken broth until the chicken is about 1/3 way covered and simmer for about 15 minutes or until cooked to your preferred done-ness)
finely grated lemon zest
olive oil
salt

alright, so i add all the ingredients to the pizza, drizzle with a good amount of olive oil and sprinkle with kosher salt.  pop in the oven on the stone and cook for about 15 minutes or until your preferred amount of done-ness of the dough.  it's really good.  the kale gets crispy and gives a smokey taste, the mushrooms are earthy and the lemon zest brightens up the flavors and the onions give a sweet taste.  give it a try!

oh, and this recipe is z approved.  he loved this pizza, especially the crispy kale!  i was surprised!  in fact, i think i will have to make him some kale chips.
