update on change of diet

wow.  so it's been about 3 weeks since i declared that i would be changing my eating habits a bit, in this post.  it's actually been going well, better than i expected.  the most notable difference in what i'm cooking is that i'm using less meat in our meals.  so pinterest has been my best friend as it has been an excellent resource for me for veg recipes.  when we do eat meat, i stick to the 4 ounce suggested serving rather than how i previously used to eat---easily putting down a pound of steak at dinner.  i have noticed a weight loss, which is unfavorable---i don't want to lose weight, just be healthier.  so i need to figure out a better way to get all the calories and protein i need while cutting down on the meat.  i have noticed that i've only had one headache in the last 3 weeks...perhaps a correlation?  this weekend hubby smoked some brisket and ribs and we allowed ourselves the ability to eat as much as we wanted, and i noticed that after only 2 small ribs and 2 very thin pieces of brisket, i was satiated.  also very interesting.  i still need to figure out how to eat better breakfasts and snacks during the day, and am still trying to increase the amount of veggies, even though i am definitely eating more than previously.  the refined sugar thing---probably haven't been as successful with because since i've been out of school (about 2 weeks) i've been baking a lot and thus eating scones, custard filled cupcakes, cheesecake filled chocolate drizzled strawberries, and many other treats.  but at least i'm cooking it so i know what's in it.  that's my justification anyway.  ;)  so far, these have been my favorite meals:

potato curry with peas, mushrooms and garbanzo beans with potato-zucchini fritters and tsziki sauce---all homemade

quinoa salad with white beans, spinach and tomato with a balsamic dressing
ok, i know, i know, the pictures of the meats doesn't count---but, it's an honest account of what i ate and enjoyed.  if you have anymore ideas for me as far as snack foods that are healthy and homemade, please comment below!
