delicious and healthy recipe; black rice, golden beet & avocado salad

Macadamia-Crusted Cod with Black Rice, Golden Beet & Avocado Salad

this is one of the tastiest dishes that i have had lately, and super healthy. our friends were going out of town and had a meal from Blue Apron that they gave to us so as not to go to waste. Blue Apron is a meal delivery service, they drop off ingredients and a recipe for a certain number of days per week and then you prepare it yourself at home. it's a pretty good deal. anyway so we got to try it.  the recipe included macadamia crusted cod, but there was nothing special about it, however this black rice salad was so flavorful, the black rice had a great texture, the avocado gave a creaminess and the lime brightened up the dish with some acidity.  the combination of all the flavors worked so well together.  i will definitely be making this again!

ingredients:
3/4 cup black rice
3 scallions, thinly sliced
1 avocado, diced
5-6 baby golden beets 
1 lime
2 teaspoons chopped mint leaves
1/4 cup macadamia nuts, toasted & chopped

instructions:
heat 2 small pots of salted water to boiling.  once the first pot of water is boiling, add the rice and cook 27-30 min or until tender.  drain thoroughly and return to the pot, set aside.  while the rice cooks and once the second pot of water is boiling, add the beets and cook 22-25 min or until tender when pierced with a fork.  drain the beets thoroughly, when cool enough to handle, use your hands and a paper towel to gently rub the skins off of the beets, discard skins.  cut the beets into wedges and place in a bowl, set aside.  zest the lime to get 2 teaspoons of zest and cut the lime into quarters.  top the diced avocado with 2 of the lime wedges, season with salt and pepper.  To the pot of cooked rice, add the cooked beets, lime zest, scallions, avocado, mint, toasted macadamia nuts, and the juice of the remaining lime wedges.  add a drizzle of olive oil and season with salt and pepper to taste.  enjoy!
