mmmmm toffee!


so i wanted to share a recipe that i used to make toffee over the holidays.  i had never made toffee before but i absolutely love it.  and it was actually quick and easy.  i followed this recipe:  http://damndelicious.net/2013/12/11/easy-homemade-toffee/ without any exceptions.  when the sugar and butter mixture was bubbling and i was mixing constantly, after about 5 or so minutes i was looking at this goopy mess that was all separated and not looking like toffee at all, stirring with one hand and looking up a new recipe on my phone with my other hand.  i was thinking, this can't be right, this recipe is crap.  but then, about a minute later, when the mixture started to darken to the color of toffee, it magically came together in a homogeneous, creamy concoction.  ta-da!  i followed the rest of the recipe, and poured it all out on a parchment paper lined cookie sheet to cool, although hubs and i really really wanted to eat it right then.  the next morning (it was really late at night at this point, i had just finished making two pies when i got to the toffee), i broke it into pieces and put it in a container, and we munched on it over the next week.  and we gave some away.  probably a good thing because i could have eaten all of it.
